Also known as the winter chanterelle, this member of the chanterelle family is a lesser known diamond in the rough. The easiest of all wild mushrooms to cook with, perfect to use in soups or to go with game dishes, buttery sauces or with eggs. Less meaty than the golden chanterelle, and with a texture that is soft and moist.
