Black summer truffle or tuber aestivum is one of the most known for its easy availability and affordable pricing. It is also called ‘Scorzone’ in Italy because of it’s rough skin. It has a rich earthy and woodsy aroma with flavours of garlic and wild mushroom undertones.
Storing/Serving Tips: Once a fresh truffle is out of the ground, it doesn’t keep long. To best preserve your truffle, wrap it in a paper towel and store in an airtight plastic container in the refrigerator. Shave over dishes at the end of the preparation.
